A big reason comic heroes do this is because the writers want to be able to bring the villain back. Comics at written for years, decades. If all the villains were killed off each time and the writers had to constantly invent new ones it would be very high pressure and I doubt it would work.

People always ask why Batman doesn't kill the Joker. Joker actually did die in his first appearance, but he was so popular with fans that they retconned it and brought him back.
