I'm sure that one ship was used a whole lot before it kamikazed. The cost ratio, especially considering the rebel losses in almost every battle would be FAR better suited to this sort of tactic. Especially considering you could easily get the same result with one-man ships. You have to remember that the Rebels are trying to be a symbol of hope for the galaxy.
