you can literally still do this

it was the USDA that made it so all milk needed to be homogenized, and there's a few ways to do that.

one is faster, but you lose more of the flavor, while the other is slower but retains most of the flavor. i'm sure there's a middle ground there, too, but the faster method will always be the one taken.

that being said, there's more flavor in milk now than there was even just 5 years ago, so they are changing methods.

And yes, many places have the option of getting fresh milk delivered, but most people dont live in those areas at least not in the U.S.

I am also in agreement that organic vs not doesnt always have an impact on taste. Its the quality and care that goes into the food being used to feed the cows and bow they are treated and how their milk is processed that affects taste the most. You can have a crappy organic mik and a high quality milk made with help of laboratory equipment.

If they were of equal quality though id still spring for organic if I could afford it. Less to do with concerns ovef my health and more to promote sustainable agricultural practices.
