I soft reset the ambush encounter until I get Chansey. They aren't too rare so it's not bad.

I lead with a Marowak that know False Swipe to knock the first Chansey down to 1HP. If it summons a second Chansey, I just knock it out. If it summons Blissey, I switch for a Pokemon with Thief and try to steal a Lucky Egg before switching back. If you a super unlucky, Blissey will have a Lucky Egg and Fling it at you on the switch but this never happened to me.

Once Chansey is at 1HP, I switched to Compound Eyes Butterfree with Acrobatics, Thief and Sleep Powder. I use an X Attack so Thief OHKOs Blissey. I then use an Orb so Chansey starts summoning more Chansey and Blissey. I KO summoned Chansey with Acrobatics and KO Blissey with Thief. Sleep Power is there if a shiny Pokemon shows up. I use Leppa Berries to refill PP on Acrobatics.

I don't do anything special to keep the original Chaney alive. I just start a new encounter if it Struggles or if I get a Lucky Egg. I didn't think it was worth training multiple Thief Pokemon for this. Although, I kept my in game Alolan Muk with Thief on standby just in case.
