King's Field series and Shadow Tower (not that I'd really recommend it...it's hard to get into, but very rewarding if you do)

Jumping Flash (I feel like everyone should play this eventually)

Silent Hill 1

RE and Dino Crisis series (RE3 and Dino Crisis 2 being my favorites; Dino Crisis 2 is kind of like the missing evolutionary link between classic RE and RE4)

Driver series (Nothing compared to GTA3, but for 3D third person open world exploration in a city, probably the best you could get on PS1)

Syphon Filter 1 (this game in retrospect seemed way ahead of its time, and had a very interesting opinion of what a taser is capable of)
