Something having an extremely low chance of happening is not a good argument against it. Especially when it's got an infinite amount of time to happen as far as we can tell. Improbably occurrences happen on a daily basis, on our planet alone, let alone in the universe as a whole.

The problem here is you are equating life to words thought up by humans and printed into books, etc. It's not the same thing. Life (as we know it anyway) needs several things in order to form. Water, oxygen, etc. There is an abundance of this stuff in the universe, as a whole.
