Topic	Those independent restaurant owners who have stupid "rules"..

Chefs take pride in their food, generally they're not doing it just for the money. To them it's a craft, and they want you to experience that craft. Usually they are reasonable about choice too, but it's worth considering why they might not want you to alter the food. Chefs (actual chefs, not frybreakfast cooks) work a high stress job doing ridiculous hours at low pay because they love making food.
