I mostly agree with this. TNG season 3 is probably the easiest place to start with older Trek if you just want to dip your toe in the water and get a sense whether Trek is for you. You'd also be fine just googling a list of best TNG episodes and watching those. It's not a very serialized show so it's fine to skip around for the most part.

If you want to check out a modern Trek show Strange New Worlds is probably your best bet.

TOS is good. I think the writing and performances hold up well for being such an old show. But it is a show that's more than a half century old. If you're used to watching TV and movies from the 60s you might start there but otherwise it might be a little too jarring. Definitely worth checking out though if you do watch other Star Trek and find that it clicks with you.
Also seconded with Strange New Worlds for modern Trek, lol.

Discovery's first few episodes are...jarring to me. And I have several questions LMAO.

Like, why was that court martial trial so damn dark? Imo, you can show the seriousness of the situation while also being able to see, haha.

Also, are Starfleet prisoners normally allowed to keep their badge for six months after being stripped of rank and sent to prison?

Tilly, however, is a shining light in an otherwise VERY dark show lmao. Also, she damn cute, too. :3
