At this point, I'd say TOS is really for people who appreciate the history of Trek more than anything. It's not something a casual consumer in 2023 is necessarily going to glom onto, unless they're of a certain age.

I'm a Trek fan, start to finish, so I don't think there's a good place to end. Just keep going til you've got it all, and then wait for more. That's me, though.
I mostly agree with this. TNG season 3 is probably the easiest place to start with older Trek if you just want to dip your toe in the water and get a sense whether Trek is for you. You'd also be fine just googling a list of best TNG episodes and watching those. It's not a very serialized show so it's fine to skip around for the most part.

If you want to check out a modern Trek show Strange New Worlds is probably your best bet.

TOS is good. I think the writing and performances hold up well for being such an old show. But it is a show that's more than a half century old. If you're used to watching TV and movies from the 60s you might start there but otherwise it might be a little too jarring. Definitely worth checking out though if you do watch other Star Trek and find that it clicks with you.
