Topic	How did restaurants reject applicants before the internet?

Many of them got now hiring signs up, and these signs have been up for quite some time. I've seen some restaurants operating at diminished seating capacity, because they literally don't have enough waiters or cooks to be able to fill all the tables. If things are this bad, and you still get rejected, I believe I'd just call it quits at that point.
