They don't want to feel like they owe you something. A lot of these entitled nice guys are nice in the hopes women will fuck them and get bitter when they don't reciprocate their affections. Women have their guard up to protect themselves from nice guys.

sadly, I was actually told this on a date I was on. I literally looked at the woman and said "It's coffee....". I'm not trying to screw you over coffee. Hell, I wouldn't do this on a first date regardless. It's extremely sad that we've gotten to the point in our society where we as men can't pay for coffee without the woman walking out on us.

Then on the other side of the spectrum you have women who want you to pay for a 120 dollar meal on the first date. Like.... no. My money is more valuable to me than that. I can spend 1/4 of that, cook us up a nice picnic, as I enjoy cooking. But I'm not wasting money on something that isn't going to work.
