Otherwise, looks good! As for the soy sauce you are probably having issues because you are using too much light soy sauce and not enough dark. And by that the two that you have on the table look to both be light (I can't quite tell with the Kikkoman as I don't use it, but I want to say that's their light sauce branding). Get some dark soy sauce (both of the ones you have on the table have a dark version, if you want to stick to those brands) and split the ratio. --- "A shouted order to do something of dubious morality with an unpredictable outcome?
