But what about mom and pop restaurants? They cannot afford to keep up in that market.

Respectfully, the market hasn't been perfect for "mom and pop" stores for a loooong time.

I mean before some of us (not all of us) were born "long time".

The illusion of a bunch of chain stores in any given state ran by a family of two to five people that carry the economy on their backs is exactly that - an illusion. It's why they use the term "Small Business" instead nowadays.

A small business can have anywhere from 100 to 1500 employees. They might be distributed in smaller, local stores across multiple states or a single state. Their revenue is also generally less than $40 million annually, but greater than $1 million.

They get away with this because as a consumer, if you enter your local store and see 5 employees, you would definitely immediately consider them a small business. And you'd be right. But they're also propped up by an individual or individuals who have a large amount of capital to maintain and even profit off of an organization which requires minimal overhead.

Mom and Pop shops don't have that advantage. They are usually barely keeping their business running, unless they know how to utilize the same Govt. programs for assistance based on their location that small business owners do, as well as itemize every write off they can account for. They are also usually paying their family who works there with them off of the money they actually make.

Raising the minimum wage of workers at established businesses - small or large - should not do anything to mom and pop shops. Not in the least. Anything of the sort is the result of small business owners or large corporations trying to put the squeeze on them on purpose to increase their own profits.
