Suteki Da Ne scene feels like it's what the devs wanted to go for as the iconic scene, but I don't think it particularly stands out. What feels like it defines the game and its themes more is the Yunalesca scene, I think. Everyone gets their own lines about it, and it reinforces the themes they're going for in a blunt way. The truth of the Pilgrimage and the pre-Zanarkand, "This is my story," are also pretty iconic but don't encapsulate the game as much.
