Games like Diablo that are real time but success comes almost entirely from stats and using the right spells/attacks/items etc. are still easy to classify as RPGs. Zelda games may have some stats but they are peripheral so it's easy to say they're not.

Souls games are more of a hybrid. So they can be hard to categorize. They usually have a high skill level and while you can use high stats and other stuff to cheese all the difficult battles... most people see them as highly skill based games, so they're usually categorized as action adventure games with RPG elements.

It's up to you where you want to put them though.
