I'd argue that "living fossils" like horseshoe crabs and coelacanths are the best designed animals, as they've survived largely unchanged for a few hundred million years with the fossil records to prove it.

From a strictly aesthetic standpoint, I think vulpes (true foxes), octupus, and aranae (spiders) in general are really cool looking animals. The latter is admittedly tough to generalize as there are over 50,000 known species but morphologically and physiologically, I've always found the lot of them to be fascinating.
