Ugh. Never understand why someone would boil them. Just sautee in a pan with seasoning. Even just doing that with some olive oil, pepper, and salt is miles better than boiling.

For me it's a texture/consistency issue rather than taste. I don't like crunchy/crisp vegetables.

Celery, Onions, Peppers and Carrots are a good example. If they're cooked well are soft and in the case of onions and peppers cut very small. I'm perfectly fine with them. Larger uncooked or still crisp I can't stand them.

I tried an uncooked carrot chip the other day and felt like I had to chew for 10 minutes to be able to swallow it.
It's funny. When I first started dating my wife, I was the same way regarding the crunch. She'd cook them until they were overly soft which allowed me to eat them without issue. Over time, she'd cook them less and less until they had a normal amount with a bit of crunch. It took baby steps of adjustment but now the crunch doesn't bother me outside of carrots.
