opopopza 03/20/23 9:28:07 AM #4:	Probably a big part is the limited availability of fresher vegetables in the past meaning they often didn't taste great unless you got them at the correct time of the year. Also some vegetables, like brussel sprouts, being genetically tweaked over time to taste less bitter.
