Limbs seem like a evolutionary disadvantage for something that doesn't move
For a carnivorous plant of that size? Maybe not. The Sarlaac seems to lack anything that would actually encourage a creature to fall into it, in the way that carnivorous plants on Earth tend to have smells that prey insects are attracted to, so having a way to capture prey for nutrients would be a benefit. It's just a matter of catching enough prey for the Sarlaac

The real question is "how does this thing survive in a vast desert wasteland?"
Which, evidently some authors also questioned, because in Legends, the Sarlaac on Tatooine was an oddity, they tended to be on more swamp-like worlds like Felucia.

Also, I just realized you're probably talking about the limbs on the plant body. In Legends someone came up with the idea that in juvenile life stages, it moves through the ground and hunts prey more like a beast. Which frankly makes no fucking sense to me at all, but most scifi writers are not botanists.

I believe the Star Wars Fandom site has a screen cap of an old DK book showing the internals of the Sarlaac as well if you care to see it.

Disney Canon states, to the best of my knowledge, "it's a big fucking hole in the desert with tentacles that eats people. Now then, remember that Season 3 of The Mandalorian is airing now on Disney+ exclusively, so please subscribe."
