If you don't have a tofu press, use a couple plates Gently toss the tofu in the starch and seasonings If your tofu says "Firm" or "extra firm" on the package and you press it for an hour it shouldn't fall apart. --- When it's hard to see the benefits, the tavern is a decent way to seal off all the stimulus, feel something close to death but just a little bit ...
