None of the pairings are really canon (though some are essentially canonized by Thracia 776) but there are pairings like Adean/Midayl where it's clear the characters are into each other, and usually that corresponds to faster love growth and/or unique conversations. Midayl's not the only one who likes Adean though so even if you stick to those, you have options!

The reason to start thinking about it now is because love between characters grows even when you don't want it to, and there's nothing like in later games where you have to accept the S-rank support in a menu to finalize it, it'll just happen without even telling you.

And IIRC the last castle auto ends the chapter
