I think the biggest issue is that they tried to do too much too fast in the last two seasons. Which led to terrible writing choices because they realized they needed to get certain characters to certain places, but didn't have the time to build it up in the traditional slow burn story telling form that GoT was known for.

Charcters were instantly transporting large distances, random asspulls needed to happen left and right, etc.

Like, I don't think too many people had too many complaints about the actual plot points (except bran the broken which we should all acknowlege was stupid af) but how they were executed.
