Formal training in any customer facing position when a customer behaves in a threatening fashion is 1: assume it's a robbery, 2: tell them they can take whatever they want and just pray they don't decide to kill you anyways.

So like, maybe this wasn't the brilliant gotcha you think it was.

Well judging by the video actually behind the counter and not the goofy space between it.

Fun fact, it's not about dining room vs kitchen and the counter that separates them. it's about aggressively closing the distance with somebody being LITERAL FUCKING ASSAULT.
