I'd say the cooking guy from 2 was the most forgettable, the developers really wanted you to learn not to trust anyone with the first case and Leon was involved with that one so it's kind of hard to forget him but the cooking guy was just there, made no lasting impression and then gets eliminated immediately. I always remember him just for being the first case.
