He didn't make them very often because it was extremely time consuming, especially the part where he'd fill them with a pastry bag one at a time, but they could be frozen so he'd make a huge batch and we'd have cream puffs for months. He took his recipe to the grave. Cream puffs start with a pte choux, so I guess that would be French? --- Minutus cantorum, minutus balorum, Minutus carborata descendum pantorum. ...
