I've played every Dark Souls and it took me about 10 tries to get to half health and another 20 or so to win, after leaving and leveling for a bit and getting some better equipment. Also using the NPC and a bell summon. That's just how this game is. But most any difficulty in these games can be overcome by getting more stats/gear.
