Most characters are locked to one weapon. A few, mostly the main characters like the different Links, Ganondorf, Zelda, and so on have more than one weapon that completely changes how they play. For example, Link's sword set focuses on quicker attacks on fewer targets, while his horse set is about mobility and clearing things while moving, though it's less effective for dueling against enemy captains. Note that Ganon and the Cucco are Wii U-exclusive characters tied to a certain game mode in the DLC.

Battles can vary. Some can have really different objectives like quiz maps. You enter a keep, are given a question like "Defeat the shield-wielder!" or "Defeat the foe who has a horse!" and defeat the correct target without killing the other. The hardest one is one where you're given like six keeps, all at really low health, then told to defend them from various enemies that spawn around the map every so often. That one requires the most target prioritization and factoring in distance between keeps and shortcuts between them. They can be frustrating, but they're also fun.

Also, you'll spend a lot of time grinding for materials to upgrade badges for characters. You'll probably burn out on the game before getting them all, even for just the characters you want, but the subreddit for this game has a list of materials spots for Wii U and 3DS, DLC and no DLC. It's also got write-ups on the characters and the best way to use their weapons for different situations.
