I get some nice coarse ground chili meat if I don't have any fresh deer to put in. Start browning that with some black pepper. Put in 2 or 3 onions, 2 or 3 heads of garlic and drain the grease off when it's done. Put in a bunch of chopped fresh tomatoes if I have, some canned whole if not and mash those up in there. Pour in some beer, chili powder and other pepper powders if I have on hand such as ancho, cayenne, arbol, urfa, chocolate ghost, chocolate hab, what have you. Cook that down, add more beer if needed. I also like to put in whole jalapenos while it's cooking so you can have at least 1 per bowl. At the end I add some very dark chocolate to taste. Serve over pasta with extra sharp cheddar.
