I'm pretty sure Ryuk has gotten very little changes in the adaptation. Largely, because I was looking it up on wikipedia and

Warner's studios planned to change the background story of Light Yagami into one of vengeance instead of justice and to remove Shinigami from the story. Black opposed this change, and it had not been green-lit.

Plus there's no real way you can Americanize the Shinigami.
