Topic	I'm playing Final Fantasy V for the first time.

Technically, not DoubleGrip or whatever the Two-Handed weapon ability is either, because Knights don't have it innately. They have access to every ability that doesn't explicitly have to be equipped and is possessed at level 1 but only if you've mastered that job. For most jobs, this is actually just an increase in stats. It's similar to the freelance job from Bravely Default with the passive for every job mastered equipped. Really! Then I will recant my earlier comment. Sorry, I forgot to add that yes, the Berserk thing is an exception.
