If you're starting on Professional....you're pretty much starting from scratch again and nothing passes over unless you've beaten the game on that difficulty already. The only differences from what I remember is that enemies does more damage and I think they have more health as well. You also aren't able to buy the Assault Vest that reduces damage. If you kill the Merchant...he doesn't respawn for the remainder of the chapter or area I think.
