Desu is a verb of existence that pretty much just means "is" "am" or "are". "John desu" means "am John", which is perfectly grammatical in Japanese. I could say "Watashi wa John desu" which means "I am John" but Japanese language lets you cut out subjects a lot to be filled in with context.
It's a copula, not a verb. There are various uses for it aside from the one you mentioned, for example it can also be used to add politeness to a sentence (in which case it has nothing to do with the state of being.)
