I was squinting at that graph, thought it looked a little strange given that scientific data usually isn't this nice flat smooth line.

Did a google search for "co2 and temperature graph wikipedia", somehow found this instead which actually addresses that specific graph:

Long story short, the graph there did come from a scientific paper, but the temperature graph there isn't actually based on measured data. It's based on "are we in an ice age? OK, setting the global temperature to 10 degrees. Are we not in an ice age? OK, setting the global temperature to 25 degrees". It's not actually based on temperature measurements (and then the article spends a bunch of time talking about "let's try to make a temperature graph for that time period by using these measurements from different scientific teams").
