A California roll for yourself isn't hard to make. Being a legit Sushi chef isn't incredibly difficult. You usually spend at least 5 years learning rice.


Not saying I can prepare everything, but it's actually who you learn from that makes time irrelevant.
As for rice. I listen to old Asian women who school me and have a pleasure doing it. Being white I always thought there wasn't much difference in rice. I've been all over Asia, and sushi or no sushi, it's the women who know most about this staple.
It's actually amazing. I was in a part of the Philippines where all the roads are dirt and I never expected that a lady living in a shack like home would serve me the best rice I ever had.
It's like she took the little she had, and made it to perfection.

Main reason I couldn't be a sushi chef is because I seen how fast an experienced chef can serve it up, and I'm like a turtle compared to them. :(
