The trend for bigger food is largely because the cost of the food itself was at one time much cheaper than the labor costs, and is still the more fluid part of the cost.

If we simplify the math, and assume that a two-ounce burger and the labor costs of assembling that burger are the same, it's possible to double the portion size by raising the price by half (150%), because any increase in the labor costs would be negligible. A $2 burger could then double in size and sell for $3, creating the appearance of an good deal.
