Sylvain: Very easy to recruit as female Byleth and is a good early game unit (which BE can have issues with). Significantly less useful as male Byleth since you have to go through normal recruitment methods.

Ingrid: Shares a paralogue with Dorothea and has the better reward tied to it. If you do decide to recruit her, wait until chapter 6 or so when gets recruited as a Pegasus Knight.

Mercedes: Pretty much just for story reasons, since she has ties to a BE character. IIRC she also has an act 2 paralogue with Caspar I think (but that might only be on SS).

Leonie: Shares a late game paralogue with Lindhardt than can only be done if you have both. The paralogue is one of the more frustrating ones, (especially on the CF route), and the reward is only ok, so dont feel the need to recruit her just for that (though she is good unit).

Shamir: Very powerful when she 1st becomes available to recruit since she comes as an advanced class while everyone is still in an intermediate one.

Manuela or Hanneman: 2 of the weakest units in the game, but their paralogue has a very good item in the chest on the map so its worth recruiting 1 just for that.

Those are the main ones that stick out from what I remember.
