I know you USED to be able to just go to your friends list and click an x in the corner to delete them, but now you seem to have to go to their individual page to delete them.
That X never allowed you to completely defriend them to my knowledge, it only let you block them from ever appearing in your news feed.
Which is functionally identical on your end as long as the person doesn't contact you in any way. They can still see all of your posts though.
