Fire Red/LG is a good start. They took the original games and polished the mechanics, took out the glitches, and made the graphics very pretty.
Then I would move on to The Gen 2 remakes or Gen 3.
It's got to be Gen 3 before the Gen 2 remakes.
Gen 2 remake is technically Gen 4, and while there are not a lot of huge changes, you really can't go backwards a generation (in terms of game design) for any reason and you shouldn't skip one either.
