My favourite is games where an enemy/boss fight won't trigger their phase change cutscene/animation when they're staggered, but they also won't take any further damage, so unless you're paying attention to the health bar you can just completely blow your load for nothing.

FF16 is bad for this except for randomly the final boss, where you can potentially kill them before triggering the final phase.
