I don't think there are wild Nidoking in Mt.Moon, unless I'm forgetting something.

You can catch Nidoran Male outside of Viridian City, and it evolves into Nidorino at Level 16 (perfectly accomplishable before Cerulean City). You can also find at least two Moon Stones in Mt. Moon.

I should mention that I'm a Smash player who has no problem with Terry's inputs and can pull them off easily (I kind of struggle with Power Geyser, though). Then again, I have experience with Street Fighter and the Capcom Vs. series (and other fighters, such as Soul Calibur).

If I'm allowed to be completely unrealistic...

-Very large, near-open world region, though Pokemon still needs some semblance of structure, though. Although you can go anywhere you want, you still have the specific line of tasks to follow.

-At least 600 Pokemon available ingame, with no restrictions on transferring from previous games.

-At least 150 all new Pokemon introduced.

-At least three dozen Regional variants of previous Pokemon.

-All Pokemon are seen on the overworld, so no more random encounters.

-Pokemon battles are still turn-based, but the animations are far more dynamic, and the Pokemon are also scaled properly to their sizes in relation to each other and the trainers.

-The ability to have Pokemon follow you on the overworld, choosing which one as opposed to automatically defaulting to the first in the list.

-Full trainer customization, including options for body size.

-Rebattling trainers, either through the VS Seeker or another means.

-Gym Leaders for every type, but you still need to beat 8 to qualify for the Pokemon League. They can be battled in any order, and their teams change depending on how many badges you have. Gym Leaders can also be rebattled.

-The Elite Four each use Pokemon of different types, and are centered around specific battle straegies instead. This of course also goes for the Champion.

-Secret Bases, ORAS-style. Including the ability to find other players' Bases and battle them inside.

-The Player Search System.

-Contests, ORAS-style.

-The Battle Frontier and the World Tournament return.

-The Pokeathlon returns.

-Move Tutors available.

-Ultra Space returns, fleshed out into a fully-explorable dimension with access to full environments, with its own collection of Pokemon. Includes all new and existing Ultra Beasts.

-Easy ways to further customize Pokemon's Natures, EVs, IVs, and other things to streamline preparing Pokemon for competitive play.

-Triple, Rotation, and Inverse Battles return, and are far more prominent than before (same with Double battles).

-Many, many sidequests throughout the game.

-A selection of Mythical Pokemon obtainable ingame via their own very hidden sidequests.

-Grow Berries in their own garden, or have a few portable pots to grow them on the go.

-Fully-voiced cutscenes. Ability to skip cutscenes as well.

-Option to skip tutorials.

Yep. Great idea, terrible execution.

Hard mode was in Black 2.
Easy mode was in White 2.
Both were unlocked only after beating the game.
You had to trade Keys with the other version that already had them unlocked to get the other mode (though doing this lets you use it without beating the game).

Yeah, that's kinda the issue. IIRC the natdex wasn't originally in Sun/Moon but they patched it in later. Only difference is the natdex didn't have descriptions for the Pokemon, I think? If they decided to patch in the natdex later in Sword/Shield this wouldn't be an issue.

What actually happened was that the National Dex was never in the Sun/Moon games. However, you could still transfer non-Alola Pokemon to the games once Bank became compatible with them; they just did not have Pokedex descriptions or were not counted or added to the Pokedex at all (Bank DID later patch in Pokedex descriptions for all Pokemon).

With Sword/Shield, Game Freak have said they have no plans to release such a patch at all.

Genius Sonority isn't that great, either.

They haven't made any console games since Battle Revolution, and basically just worked on Battle Trozei and Shuffle since. Shuffle saw some success, especially the mobile version, but it looks like updates on that have since stopped. And they have also gone on record stating a while back that they no longer have the budget for HD console games.
