The flavor also is something you acquire a taste for - it's incredibly "seafood-y" Cooked, they are not as slimy. Oysters firm up and become a little bit less seafood-y in smell, but more pungent somehow. Smoked, though, they are nice and firm but the smoky flavor mixes with the seafood flavor really well That all being said, I prefer mussels to oysters 100% --- |
