When people think of well-done steak, they think of burnt cardboard, dried and flavorless. That's not well-done, that's shitty grill skills. A good well-done steak has no pink on the inside, still has juices flowing aplenty, outside is not charred. The difference between this and true medium-well is there is no pink, it's not mushy in the center in the slightest.

A medium-rare steak, in my opinion, is too mushy, no flavor.

If I ever get a burger or steak and I'm asked how I want it, I say medium-well. This is the only way they cook it right, how a well-done steak should be cooked.

I think the reason why is because people have these skewed, elitist views on how food should be cooked, especially when raised to have one type their whole life. They think anything other than the most popular shouldn't exist, and so they don't learn what it is they actually don't like.

Medium well isn't well done and medium rare is scientifically the best way to cook a steak.
