Beyond heat (capsaicin levels), I find that the sauces differ from each other. Mild is mostly a light acidic, sweet taste. Hot has more of what is in mild, but also has more paprika. Fire is almost completely different, it is very tomato-y, onion-y and has a texture/taste that is closer to salsa. When your university (for D1 alums) played the Tigers did you think this? What did you think of Death Valley? Was it th stereotype? LSU fans said it would draw college football fans and college football fans alike. I still think it is for the bayous and your tibedeuxs and fontineuxs.
