I'm new to this series and not very confident in what I'm doing yet. Are there any stats or confidants I should be prioritising first?

for NG focus on building your social stats to 5 as they can block you from progressing social links

other than that the most important ones for NG+ are, Tower (available 9/4), Star(Hifumi) Fortune(Chihaya) and Hierophant(Sojiro) if you're running low on SP all the time, and Death(Tae Takemi) if you can afford it

Not doing Kaneshiros palace stops Makoto from showing up until you complete it, and that Mishima disappears during Shidos palace, or the Casino until you get to the treasure, and iirc you can't rank up Ann until you do Kamoshidas
