To put it simply, the last story I read was exactly that. It was a story of a cis person being accused of being trans. Op's post doesn't help either with "from the we can always tell crowd", which kind of implies they can't tell. So it would totally make sense I would go in with the presumption it was a cis person.

Both are inclusive and extremely LGTBQ friendly. You could also look into Operation Blazing Sword (coalition of volunteer firearms instructors/educators for LGBTQ people) and see if they have a volunteer instructor in your community.
