Tom_Joad posted... North Carolina is, by and large, a pretty nasty place to live.
My grandparents (father's side) and family live in the Raleigh-Durham-High Point area.
The food there is very bad, from sweet tea (gag) to it's BBQ. Seriously, pork BBQ slathered in sauce?
BBQ is beef, dry-rubbed. If you have to have a sauce, it comes in a little paper cup on the side and is called dippin' sauce.
At least South Carolina uses a mustard-based sauce, which is okay... but it's still pork. And that's just not right.
Ribs are BEEF and are enormous. They aren't supposed to be tiny or pork.
There are numerous styles of BBQ. North Carolina, Texas, St. Louis, etc.
I've made spareribs and baby backs many times. I've had people say they'd pay money for them. And guess what? They were sauced ribs too.
And here's the thing. I prefer ribs that give me a Glasgow smile of sauce whenever I eat them, but you know what I don't do? Immediately claim that anything other than what I like is invalid and therefore wrong.
