Nothing. There's good and bad anime, and it's really nothing more than a statement that it's a cartoon from Japan.
Being really into "anime" as a result doesn't make sense to me. Being into a series, or a particular director or studio, or a specific genre? Absolutely, sure thing. But saying that you like anime as a generic end all be all is really a nothing statement.
Irregardless, for all intensive purposes, I could care less.
