But at that point the anime caught right up to the manga and they made the curious decision to just never have filler arcs anymore. And then they decided the way to deal with this was to have a single episode of the anime be exactly one chapter of manga, sometimes less.
So there are genuinely times in the anime in the most recent couple hundred episodes where you will see the same scene take place for 20 or more episodes. I know because I counted a particular fight scene, it went on for nearly 30 episodes. And there's lots of intense staring and gasping that goes on for an entire minute when it should be less than 3 seconds.
Couple that with the fact that some episodes don't actually start until the 6 minute mark and you have not a lot of substance per episode. It's impossible to watch on a weekly basis imo.
Anyway its an amazing show but the pacing is fucking dire lately. The animation in the latest arc is unbelievable though. They're whipping out movie-quality animation for a weekly shonen show, its wild.

On the other hand, it's really hard to newer watchers to get in on it because it feels like it takes forever for anything important to happen.
Switch over to One Pace when you feel the pacing is starting to drag. I recently started watching it from Punk Hazard onwards and it's an absolute godsend.
I was starting to straight up hate One Piece because everything that annoyed me like the characters with annoying speech patterns and the same few jokes being repeated ad nauseum just got a ton more screentime due to padding. Now I only have to sit through one instance of Usopp or Sanji being awful every few episodes.
God Usopp is not that bad.

One Pace and similar edits have been a godsend for the current arc
Just.The anime is a glorified commercial. They really have no need to take breaks to improve it.

Why are there older episodes not finished in One Pace. Seems like an odd thing to release the series and missing several episodes >_< I was actually going to go watch One Pace but don't know if I want to if by the time I get to Alabasta, there's a few episodes missing...the best parts in fact.
Hard to recommend One Pace if they're missing huge parts.
Considering One Pace edits using manga chapters as a reference, I'd say the parts that are missing are likely filler.
i'm on like ep 85 and i started over a year ago. got to like episode 70 and quit for like a year. watched a bit just at work having some down time to get to where i'm at. i'm still really not into it though. i know there's an arc around like 120ish or so that's supposed to be good.
like it's not bad or anything but i really haven't seen the hype for it yet. know the animation doesn't even get good to like episode 800.

Oh yeah, you're right. Judging by their project overview document the person responsible for editing Alabasta is also working on other arcs. Most notably Dressrosa, so it's likely they wanted to finish Dressrosa first as it was in a dire need of an edit. The pacing in Alabasta is perfect when compared to Dressrosa.
It also says the Alabasta arc is in the initial release stages. So it's still being worked on currently.
EDIT: As for your initial question as to why older episodes aren't finished yet... It's because One Pace started as a fan project when the pacing got unbearable in later arcs. They didn't start editing from episode 1, they started somewhere post timeskip IIRC.
Is there a quick way to be notified on new episodes or should I just check back often?
Also, its weird because I remember One Pace being up around Enis Lobby but it was being streamed on the site. This doesn't give a streaming option unless I'm missing something?

lol I'm only on episode 50 after a couple weeks. East Blue is a slog to get through ngl.
I've never seen a streaming option, but I haven't been watching One Pace long. My guess is they stopped streaming when the project got bigger and bigger because of file hosting issues.
