piper is okay. she just feels too adjusted to me. curie comes from the same background as the lone survivor, she has the same ignorance of the commonwealth (or would if the LS's writing wasn't wonky), she's adorable, it's just too perfect.
Yeah, but like a lot of other companions, you can play the game for hundreds of hours and never know she exists.
81 is a side-quest area that's a bit off the main path. It's kind of easy to miss.
Piper is pretty much plopped dead in the middle of the path if you're even remotely following the main quest storyline. She, Preston, Codsworth, Dogmeat, and Valentine are basically the "core" companions, while all of the rest are either tied to specific factions or are easily missable.
If there was going to be a "canon" love interest, it would pretty much have to be either her or Preston. Because you can't fuck the dog or the robots. But Preston is... Preston. So yeah.
If you need thematic ties, Piper has those too. She's the "Red" to your "Blue", she's the present to your past, she's your obvious tie to the new world you've discovered (symbolizing your acceptance of the world you've found yourself in rather than clinging to the one you left behind). She's also a crusading do-gooder who sets at least a few significant story moments in motion (she points you to Valentine, she goes after the mayor, etc), and helps spread your story to the people of Diamond City (via the interview for the paper).
If you're playing as Nate, she's also probably the closest character in personality to your dead wife.

Of course, if you're playing as Nora, the closest character to your dead husband might be Danse, but that's a whole other can of worms.

You could even compare your interest in your missing son to her interest in protecting her younger sister.
I wouldn't necessarily say that Fallout 4
has
a canon love interest, but if there was one, I feel like Piper would have to be it.
