I'm on my third attempt and I'm basically just browning them. Not like in cooking videos. I'm not trying to crisp them up I want them soft.
Anyone know how to do it?

Try covering the pan with a lid.

Also, reduce heat.

Try butter, less heat, longer cook time. It's a slow process to avoid burning the sugars.

Just used a brown onion, forgot the exact name. First attempts were white. And haven't tried butter yet

Cooking time is like 30 mins minimum, its got to be low and slow, plus you got to mix those a lot to make sure they dont burn.
If you're crisping them, you have the heat too high.

I believe covering was what really made it happen. And I added little teaspoon amounts of water every few minutes

Covering kept the moisture in, and adding water helped prevent them from drying out/burning as well, but using a lower heat would have worked as well.

I generally start with oil, and then add butter later (along with my garlic and mushrooms towards the end).

You were just using too much heat before. Sounds like your having to work hard, adding water etc, and also you can't easily see how they are doing with a cover on. I'd just try using a lower temp instead, should be able to carmalize them with no cover and just a stir every few minutes or so.

I don't know if I wanna add anything else like brown sugar. Just salt since it seems and pepper.

I put a glob of margarine in a pan, let it melt and then add the onions. It should be at a three or a four on the heat setting and just mix them every couple of minutes. Its probably one of the easiest things to do in cooking.

dont season them until theyre done. Salt and pepper fucks with the way things cook

just use a lot of oil and super low heat and keep stirring. should take like an hour. You can also add water to the pan so they dont burn and stick.

These. Caramelizing onions takes a long time, despite a rash of online recipes suggesting you can do it in 5 minutes on medium-high. Keep your heat low, your moisture high, and stir them periodically to keep the cooking even.

I used butter and oil and set it to 2. Took about 50 minutes, a lot of stirring. My girlfriend thought they looked too goopy but I put them in a grilled cheese and she loved it. Gotta make more when I leave work

I usually set the burner to medium, use some butter with the onions, when the butter melts I add a handful of ice cubes when the butter fully melts. It takes about 5-7 minutes. I learned to do this from a chef back in the mid 90s and it hasn't failed me since I started doing it that way.
I like to dice an onion and cook them on low in butter, and a little teriyaki and soy.

I like the recipes where you can do like 8 whole onions sliced at a time and just baked em in a covered pan in the oven with all the shit and just bam its done instant giant pile of caramelized onions
